Olive oil being poured into water. Oil and water are immiscible, which means that when added together they do not properly mix, but instead form an emulsion. Over time, the oil and water separate out by density. The lower density oil floats upwards and settles above the water. This physical property of oil and water drives many biological and chemical processes.
