Elderberries (Sambucus canadensis) are used to make jelly, jam, pie, juice, syrup, or wine but uncooked berries may cause nausea, vomiting, and diarrhea. At least 120 species of bird, particularly robins and cedar waxwings, eat the fruits of elderberries. The leaves, stems, bark, and roots contain compounds that are strongly purgative and cyanide producing. Children can get sick from using hollow elderberry stems for peashooters or whistles.
