Engraving a scene from within the WM Younger & Co.; Holyrood Brewery - cooling the wort after boiling and before fermentation. In order to prevent acidity the cooling has to be rapid; and here the liquid was passed through pipes in vertical refrigerators. Dated 19th century. 01/01/1850
