Illustration of a single-chain monellin protein. This protein, discovered in the fruit of the serendipity berry (Dioscoreophyllum cumminsii), is perceived as sweet by humans. The natural form of monellin is composed of two chains, however the synthesised single-chain version is more stable when heated and in acidic environments.
