Astaxanthin pigment molecule. Carotenoid responsible for the pink-red colour of salmon, lobsters and shrimps. Used as food dye (E161j) and antioxidant food supplement. Atoms are represented as spheres with conventional colour coding: hydrogen (white), carbon (black), oxygen (red).
