Solubility of starch. Starch is a polysaccharide, a polymer of glucose units with a high molecular weight (n(C6H10O5)). When starch is added to cold water, the polar water molecules are unable to break the extensive hydrogen bonding which operates between the polysaccharide chains. This causes the starch molecules to be insoluble in cold water.
